Too much foam? Use your angles.

The angleTilt the glass 45°, straighten halfway

Hold the glass at 45° and pour down the middle of the tilted side. When the glass is about half full, straighten it upright and pour the rest down the middle to build a modest head.

How to do it

  1. Start with a clean glass. Grease and dust make extra foam.
  2. Tilt the glass to about 45°.
  3. Pour steadily against the middle of the tilted side, bottle off the rim.
  4. At about halfway, bring the glass upright.
  5. Finish pouring into the center for a head of an inch or so.

Why it works

Pouring onto the tilted side lets the beer slide down gently instead of crashing to the bottom, which knocks CO2 out as foam. Straightening at the end releases just enough to make a head.

Questions

Why have any head at all?

A modest head carries aroma and releases some carbonation in the glass, so less of it ends up in you.

Does this work for cans?

Yes, the same pour works from a can or a bottle.
